Gustaf Mabrouk is a pastry cook and chocolate maker. He is passionate about chocolate and the craft behind making chocolate from bean to bar. Already at age 19 he won This Year’s Best Pastry Cook and has worked at fine dining restaurants in New York and Stockholm ever since. He also runs STHLM Bean to Bar – a local producer of chocolate in Stockholm. He also teaches the craft of chocolate and is a frequent guest at SVT’s Go Kväll (Tv show at Swedish channel one).
With his love for and experiences working with chocolate he has written The Chocolate Maker’s Handbook. A gorgeous book filled with advice, ideas and recipes where chocolate is the center of attention and used as the main ingredient. What makes the book unique is that it's both for professionals and for beginners. It contains a mix of easy and more advanced tip on how to handle cocoa in order to make chocolate from scratch. The book also provides valuable knowledge on sustainability when it comes to the production of cocoa.
